Nguyên liệu làm mứt gừng dẻo
– Gừng non: 1kg, không sử dụng gừng già nhé vì nó rất cay và nhiều xơ sẽ khiến cho món mứt gừng dẻo mất đi vị ngon đặc trưng.
– Dứa chín: 1 quả to khoảng 500g, chọn quả chín vừa, gai nở đều cho ngon nhé;
– Đường trắng: 600g;
– Chanh tươi: 2 trái;
– Phèn chua: 5g;
– Vani: 2 ống;
– 1 chảo chống dính để rim mứt gừng dẻo.
Sơ chế gừng trước khi sên mức như sau
– Chanh tươi: Lấy nước cốt;
– Gừng non: Rửa sạch đất cát, cạo vỏ, thái chỉ vừa thái vừa ngâm gừng vào chậu có pha nước cốt 1 trái chanh tươi để gừng không bị thâm đen, sau đó vớt gừng ra, rửa sạch nhiều lần với nước rồi để ráo
– Dứa chín: Rửa sạch, gọt vỏ, cắt bỏ mắt, chẻ làm 4, cắt bỏ phần cùi dứa, thái hạt lựu;
Sên mứt gừng dẻo như sau
– Đun sôi 2 lít nước với 5g phèn chua rồi cho gừng vào chần khoảng 10 phút, làm thế này món mứt gừng dẻo sẽ có độ trong, dẻo ngon hơn rất nhiều, sau đó rửa sạch nhiều lần với nước cho hết phèn nhé;
– Trộn đều gừng, dứa thái hạt lựu, nước cốt 1 trái chanh tươi còn lại và 600g đường (bạn có thể gia giảm lượng đường theo khẩu vị nhé) rồi để trong 2-3 tiếng cho đường tan hết hoàn toàn;
– Cho hỗn hợp lên chảo chống dính, vặn lửa nhỏ để rim mứt gừng dẻo, đảo đều nhẹ nhàng khi hỗn hợp sôi lên, bạn cho 2 ống vani vào, tiếp tục đảo nhẹ đến khi thấy gừng có độ dẻo nhất định, trong, ăn dẻo, thanh, ngọt ngon thì tắt bếp, để nguội, cho mứt gừng dẻo vào hủ thủy tinh và bảo quản trong ngăn mát tủ lạnh để dùng dần nhé.

– Món mứt gừng dẻo có màu vàng cánh gián rất đẹp mắt, mùi thơm hấp dẫn, từng miếng gừng dẻo, trong, vị ngọt thanh, chua nhẹ rất ngon miệng;
– Với món mứt gừng này bạn có thể dùng kèm bánh mì, lạc rang giã nhỏ và trà nóng sẽ rất hợp vị nhé.
