Nguyên liệu cho món thịt kho tàu không nước dừa như sau

  • 5 lạng thịt ba chỉ
  • Trứng (trứng vịt, trứng cút, trứng gà… tùy sở thích)
  • 3 thìa đường
  • 1 thìa hạt tiêu
  • 1 thìa cà phê muối.
  • 3 thìa nước mắm.
  • Hành khô, ớt cay

Cách làm thịt kho tàu không cần nước dừa

Hướng dẫn sơ chế thịt, ướp thịt và nấu thịt kho tàu không nước dừa

  • Thịt ba chỉ rửa sạch, cắt miếng vuông cỡ 5cm.
  • Trứng luộc chín, bóc vỏ, dùng dao khứa chéo vài đường dọc theo quả trứng để khi nấu trứng ngấm gia vị, đậm đà hơn.
  • Bật bếp lửa, cho 2 thìa đường vào nồi, khua đều và nhanh tay để đường nóng chảy. Cách này vừa để tạo thành nước màu, vừa giúp món ăn có chút vị ngọt dịu, hấp dẫn. Khuấy đến khi đường chuyển màu cánh gián thì cho 1 bát nhỏ nước nóng vào, tắt bếp.
  • Đổ thịt vào nồi nước màu vừa tạo, cho thêm hành khô băm nhỏ, 1thìa hạt tiêu, 3 thìa nước mắm. Ướp thịt trong vòng 30 phút, sau đó cho lên bếp nấu.
  • Đợi khi nồi thịt sôi, chế thêm nước nóng vào sâm sấp mặt thịt, vặn lửa liu riu, cho trứng và ớt vào, nêm nếm gia vị cho vừa miệng.
  • Nấu cho đến khi thịt chín mềm, là được, lưu ý, thịt kho tàu không nấu cạn nước. Nồi thịt có thể hâm đi hâm lại, thịt sẽ càng mềm ngon.

– Khi ăn múc thịt và trứng vào đĩa sâu lòng, chan nước ngập thịt, món ăn sẽ thơm, mềm, có vị thanh ngọt và ngậy, ăn không ngán. Có thể ăn kèm dưa cải muối chua và cơm nóng, quấn bánh tráng, rất hợp và ngon.

– Bạn có thể kho thay thế bước tạo nước màu bằng việc sử dụng nước dừa tươi. Với cách này, bạn không cần sử dụng nước màu và đường để ướp thịt, chỉ cần cho nước mắm và dừa tươi, đổ nước dừa vào ngập thịt để nấu, nước dừa sẽ tạo màu đẹp mắt.
